Processing: The honeyed and sun dried coffee process, also known as the Honey Sun Dried (HSD) method, is a coffee processing method that's a cross between the washed and natural processes:

  • Steps: The outer skin of the coffee cherry is removed, but the mucilage is left on and the beans are dried in the shade.
  • Drying time: The beans are dried for 3–5 weeks, depending on the desired quality of the coffee.
