Growing up in the vibrant coffee lands of San Adolfo, Huila, Brayan learned the secrets of coffee cultivation at his father's side. Today, he leads a passionate community of 60 farmers, including family members, dedicated to producing exceptional coffee that tells the story of their terroir.
Process: This innovative coffee undergoes a remarkable journey. The carefully selected Caturra, Castillo, and Colombia varieties experience a complex co-fermentation process with dehydrated strawberries, creating a uniquely fruity profile:
- 24-hour pre-fermentation in plastic bags
- 24-hour cherry fermentation
- 5-day anaerobic co-fermentation with dehydrated strawberries
- 10-day mechanical drying
- 5-day stabilization period
